Feat: Display the time of the last commit

For each project there should be a way to show the time of the last commit. Sometimes projects are not maintained anymore so would like to know which projects are currently active.

Worth noting that the project YAML files already have stats fields populated daily by a GitHub Action (per the how-it-works docs) — so the last commit data may already be available in the data layer.

If that's the case, this could be mostly a UI change — just surfacing that field on the project card as a relative timestamp (e.g. "last commit 3 months ago").

A color-coded indicator could make stale projects obvious at a glance:
🟢 < 3 months
🟡 3–12 months
🔴 > 1 year

Implemented:

• Last commit timestamps: Displays relative time (e.g., "last commit 2 months ago") on each project card.
• Activity indicators: Color-coded status dots (🟢/🟡/🔴) based on commit recency (Active, Stale, Inactive).
• Enhanced sorting: Added a "Recently Updated" option to the sort dropdown for better project discovery.
• Test coverage: Added unit tests to verify the sorting logic and threshold calculations.

This implementation uses the project stats data updated daily via GitHub Actions. It works alongside existing filters and pagination, ensuring that "Recently Updated" projects remain relevant even when filtered by tag or label.

This PR addresses the visibility and sorting requests in #5778 and #1142.
